Ingredients

  • 1 3/4 cups graham cracker crumbs
  • 5 tablespoons butter, melted
  • 1 cup plus one tablespoon sugar
  • 3 (8 oz.) packages cream cheese, softened
  • 1 teaspoon vanilla extract
  • 1/2 cup fresh lime juice (about five limes; if using key limes or key lime juice, use half as much)
  • 3 eggs
  • Whipped cream (for serving)

Instructions

  1. Preheat the Oven:

    • Preheat your oven to 350°F (175°C).
  2. Prepare the Crust:

    • In a bowl, combine the graham cracker crumbs, melted butter, and one tablespoon of sugar. Stir well to coat all the crumbs, keeping the mixture crumbly.
    • Press the crumb mixture onto the bottom and halfway up the sides of an 8-inch springform pan.
    • Bake the crust in the oven for 5 minutes, then set aside to cool.
  3. Make the Filling:

    • In a large mixing bowl, combine the softened cream cheese, 1 cup of sugar, and vanilla extract. Mix with an electric mixer until smooth.
    • Add the fresh lime juice and eggs, and continue to beat until the mixture is smooth and creamy.
  4. Combine and Bake:

    • Pour the cheesecake filling into the prepared crust.
    • Bake in the oven for 60 to 70 minutes. The cheesecake is done when the top is turning light brown.
  5. Cool and Chill:

    • Remove the cheesecake from the oven and allow it to cool to room temperature.
    • Once cooled, place the cheesecake in the refrigerator to chill.
  6. Serve:

    • When chilled, carefully remove the sides of the springform pan and cut the cheesecake into slices.
    • Serve with whipped cream on top.
