Zucchini Squares

Ingredients
- 1 cup Bisquick
- 1/2 cup chopped onion (or more, to taste)
- 1/2 cup grated Parmesan cheese
- 3 tablespoons chopped parsley
- 1/2 teaspoon salt
- Pepper, to taste
- 1 clove garlic, finely chopped
- 1/2 cup vegetable oil
- 4 eggs (or egg substitute)
- 3 cups thinly sliced zucchini

Preheat Oven: Preheat your oven to 350°F (175°C) and grease a 13x9x2-inch baking pan.

Mix Ingredients: In a large mixing bowl, combine the Bisquick, chopped onion, grated Parmesan cheese, chopped parsley, salt, pepper, and finely chopped garlic. Mix well.

Add Eggs and Oil: Stir in the vegetable oil and eggs (or egg substitute) until well combined.

Incorporate Zucchini: Gently fold in the thinly sliced zucchini last.

Transfer to Pan: Pour the mixture into the prepared baking pan and spread it evenly.

Bake: Bake in the oven for about 30 minutes, or until the top is golden brown.

Cool and Cut: Allow the zucchini squares to cool slightly before cutting. For 12 squares, cut them into approximately 2×1-inch pieces. If you cut them smaller, they make great appetizers.
