CHRISTMAS PICKLES

Here’s a fun and straightforward Christmas recipe that you can make with minimal effort:
Ingredients:
- 10 pickles, sliced thin
- 1 cup green peppers, sliced
- 1 cup red peppers, sliced
- 1/2 cup onions, diced
- 1 cup vinegar
- 2 cups white sugar
- 1 tablespoon mustard seed
- 1 tablespoon dill seed
- 1 tablespoon salt
Instructions:
Prepare the Vegetables: In a large bowl, combine the sliced pickles, green peppers, red peppers, and diced onions.
Heat the Brine: Heat the vinegar and white sugar over medium heat in a saucepan. Stir until the sugar is completely dissolved and the mixture boils. (Be careful not to let it boil for too long; bring it to a boil and then remove it from the heat.)
Cool the Brine: Allow the vinegar and sugar mixture to cool slightly.
Combine: Pour the cooled brine over the vegetable mixture. Add the mustard seed, dill seed, and salt, stirring to combine everything well.
Store: Transfer the mixture to a clean jar or container. The pickled vegetables can be stored in the refrigerator without sealing for several months.
Enjoy: Let the mixture sit in the refrigerator for at least a few hours (or overnight) to allow the flavors to meld before serving.
These sweet pickled vegetables are perfect for adding a tangy crunch to sandwiches, salads, or as a tasty snack! Enjoy!
