Girl Scout Mint Cookies

Here’s a version of the Girl Scout Mint Cookies recipe.
Ingredients
- 1 box Devil’s Food Cake Mix
- 2 eggs
- 2 tablespoons water
- 2 tablespoons cooking oil
- 1/2 cup cocoa powder
- 1 package of chocolate chips
- 2-3 drops Wilton’s Candy Mint Flavoring (or to taste)

Preheat the Oven:
- Preheat your oven to 400°F (200°C).

Prepare the Cookie Dough:
- In a large mixing bowl, combine the Devil’s Food Cake Mix, eggs, water, cooking oil, and cocoa powder.
- Mix well until all ingredients are thoroughly combined. The dough will be very sticky.
- Let the mixture stand for 20 minutes.

Shape the Cookies:
- After resting, shape the dough into tiny balls, about 1/2 inch in diameter.
- Place the balls on a cookie sheet, spacing them about 2 inches apart.
- Use a large spoon with cooking spray (like Pam) to flatten each ball into a cookie shape.

Bake:
- Bake in the preheated oven for about 8 minutes, or until the cookies are set.
- Allow the cookies to cool on the baking sheet until they reach room temperature.

Prepare the Chocolate Coating:
- In a microwave-safe bowl or double boiler, heat the chocolate chips until completely melted.
- Once melted, add a couple of drops of the mint flavoring. Be careful not to add too much, as it has a potent flavor.

Coat the Cookies:
- You can either spread the melted chocolate on top of the cookies or dip the cookies into the chocolate to coat them.

- Allow the chocolate to set before serving.
