Bûche de Noël (Yule Log) Recipe

Bûche de Noël is a classic French dessert that resembles a log and is traditionally served during the Christmas season. It combines a light sponge cake with creamy filling and is covered in rich chocolate ganache. Here’s how to make this festive treat that will impress your family and friends.

Ingredients

For the Sponge Cake:
  • 3 large eggs, separated
  • 1/3 cup (70g) granulated sugar
  • 1/3 cup (40g) all-purpose flour
  • 1 tablespoon unsweetened cocoa powder
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
For the Filling:
  • 1 cup (240ml) heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
For the Chocolate Ganache:
  • 1 cup (240ml) heavy cream
  • 8 ounces (225g) semisweet chocolate, chopped (use high-quality chocolate for best results)
  • 1 tablespoon unsalted butter (optional, for added shine)
Optional Decorations:
  • Powdered sugar (for dusting)
  • Meringue mushrooms (for decoration)
  • Chocolate shavings or berries for garnish

Instructions

Step 1: Prepare the Sponge Cake

  1. Preheat Your Oven: Start by preheating your oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper, and lightly grease it to prevent sticking.

  2. Mix Egg Yolks and Sugar: In a medium bowl, whisk together the egg yolks and granulated sugar until the mixture becomes thick and pale. This process usually takes about 3–5 minutes. Stir in the vanilla extract to add flavor.

  3. Sift Dry Ingredients: In another bowl, sift together the flour, cocoa powder, baking powder, and salt. Gently fold these dry ingredients into the egg yolk mixture using a spatula until just combined.

  4. Whip Egg Whites: In a separate clean bowl, use an electric mixer to beat the egg whites until soft peaks form. This usually takes about 4–5 minutes on medium speed.

  5. Combine Mixtures: Carefully fold the whipped egg whites into the sponge cake batter. Do this gently to maintain the airiness of the mixture, which contributes to the cake’s light texture.

  6. Bake the Cake: Pour the batter into the prepared pan, spreading it evenly. Bake in the preheated oven for 12–15 minutes, or until a toothpick comes out clean when inserted in the center.

  7. Cool the Cake: Once baked, remove the cake from the oven and immediately invert it onto a clean kitchen towel (dusted with powdered sugar to prevent sticking). Peel off the parchment paper carefully. Roll the cake up in the towel while it is still warm, starting at one of the short ends, and let it cool completely.

Step 2: Prepare the Filling

  1. Whip the Cream: In a mixing bowl, combine the heavy creampowdered sugar, and vanilla extract. Use an electric mixer to whip the cream until soft peaks form. This should take about 3–5 minutes. Make sure not to overwhip, as you want a smooth, creamy texture.

Step 3: Assemble the Bûche de Noël

  1. Unroll the Cake: Gently unroll the cooled sponge cake. Spread the whipped cream filling evenly over the surface, leaving about a 1-inch border on the edges.

  2. Roll It Up Again: Carefully roll the cake back up without the towel, starting from the same end. Place the rolled cake seam side down on a serving platter.

Step 4: Prepare the Chocolate Ganache

  1. Heat the Cream: In a small saucepan, heat the heavy cream until it just comes to a boil.

  2. Make the Ganache: Remove from heat and pour the hot cream over the chopped semisweet chocolate in a heatproof bowl. Let it sit for about 1 minute to melt the chocolate. Stir until smooth. If you want added shine, whisk in butter until fully incorporated.

Step 5: Finish the Cake

  1. Glaze the Cake: Pour the chocolate ganache over the rolled cake, allowing it to drizzle down the sides for a rustic look. You can smooth it out or create a bark-like texture using a spatula.

  2. Decorate: Decorate your Bûche de Noël with **powdered sugar** for a snowy effect, and add optional decorations, such as meringue mushrooms, chocolate shavings, or fresh berries, for an artistic touch.

  1. Chill: Let the decorated cake sit in the refrigerator for at least 30 minutes to set the ganache before slicing. This will ensure cleaner cuts and a more polished presentation when serving.

Step 6: Serve

  1. Slice and Enjoy: When ready to serve, use a sharp knife to slice the Bûche de Noël into generous portions, revealing the beautiful layers of sponge cake and cream filling. Place each slice on a plate and consider pairing it with a small dollop of extra whipped cream or a scoop of vanilla ice cream.

Tips for Success

  • Use High-Quality Ingredients: The flavor of this dessert relies heavily on the quality of its ingredients, especially the chocolate and vanilla. Opt for high-quality chocolate for the ganache to achieve the best flavor.

  • Sifting Dry Ingredients: Sifting the flour and cocoa powder not only ensures there are no lumps but also helps incorporate air, contributing to the sponge’s lightness.

  • Whipping Egg Whites: Make sure your mixing bowl is completely clean and dry before whipping the egg whites. Any grease can prevent them from whipping properly.

  • Cooling the Cake: Cooling the cake completely before unrolling is crucial to prevent cracking. Rushing this step can lead to a less-than-perfect roll.

  • Storage: If you have leftovers (though this is rare!), the Bûche de Noël can be stored in the refrigerator for up to 3 days. Just cover it loosely with plastic wrap to keep it fresh.
