The holiday season is filled with cherished memories and beloved traditions, and one of my family’s was my Aunt Imogene’s famous Chex Mix. Every Christmas, we would gather around, savoring those flavorful, crunchy snacks that she made so perfectly. Unfortunately, after her passing, we realized we didn’t have her beloved recipe. Inspired by my mom’s nostalgia, I decided to create our own low-carb version of this classic party snack to keep the holiday spirit alive.

Embracing the Memories

Reflecting on Imogene’s Chex Mix nuts brings a wave of warmth and connection to family gatherings. The smell of those delicious snacks always filled the house with festive cheer, and the crunch of each bite was a delightful reminder of the love she poured into her cooking. This holiday season, I want to honor her memory while adapting the recipe to fit our current dietary preferences.

Ingredients for Our New Take on Chex Mix Nuts

To recreate the beloved flavors while keeping it low-carb, here’s what you’ll need:

  • 4 cups of Chex cereal (use a low-carb alternative, Brands like Catalina Crunch and Magic Spoon are popular options -or- you could use Pork Rinds -or- you could use Cheese Crisps/Whisps -or- a mixture of all three low-carb options)
  • 1 cup mixed nuts (almonds, pecans, macadamias, or walnuts)
  • 1 cup pretzels (look for low-carb varieties)
  • ½ cup butter (melted)
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika (or your favorite seasoning)
  • Salt to taste
  • Optional: a pinch of cayenne pepper for a bit of heat
  • Optional: a pinch of rosemary for a sophisticated twist

Directions to Make the Snack

  1. Preheat the Oven: Start by preheating your oven to 250°F (120°C).
  2. Mix Ingredients: In a large bowl, combine the Chex cereal, mixed nuts, and pretzels. In another bowl, whisk together the melted butter, Worcestershire sauce, garlic powder, onion powder, smoked paprika, and salt. If you’d like some heat, add a pinch of cayenne pepper.
  3. Combine and Coat: Pour the buttery mixture over the dry ingredients, tossing everything together until well coated.
  4. Bake: Spread the mixture evenly on a baking sheet lined with parchment paper. Bake for about 1 hour, stirring every 15 minutes to ensure even baking and prevent burning.
  5. Cool and Serve: Once baked, allow the mix to cool completely before serving. Store in an airtight container to keep it fresh.
